It normally takes 4 to 7 years to let coffee trees bear fruits in clusters along its branches. Referred to as cherries, the fruit is initially green and turns red when it is ready for harvesting. Beneath the cherries' red skin is a pulp or, or mucilage, outer layer and a parchment. Inside these layers are usually two oval shaped beans, with their flat side facing each other. Harvesting time for coffee cherries will vary by region and altitude.
In Thailand we harvest once per year, and for 2 to 3 months as cherries ripen. In Mae Hong Son specifically, harvest starts in December every year.
Mae Hong Son province is located in northern mountain area of Thailand. Its altitude is 1000 meters above sea levels, the temperature is cool all year within the natural rainforest. Mills coffee are ready in November before the coffee is fully ripen. We only use fully ripe coffee cherries for the best sweetness and aroma.
